Up until recently I was actually under the impression that I didn't like Tiramisu. I hadn't tried it since I was little and I guess as a kid I didn't enjoy the strong flavours of coffee and alcohol. However, as a favourite of my mum and my boyfriend I decided I would make it this past Sunday for mothers day and see if my feelings for it had changed. I can official confirm I have been converted, it was absolutely delicious! It was so light and creamy, sweet but not sickly, I could quite easily eat much too much of this.

As I hadn't made it before it was a bit of a challenge surfing around trying to find a recipe that sounded right. There seems to be a lot of variations on this dessert, all I knew is that I wanted one that included Kahlua (coffee liqueur). I eventually settled on this Classic Tiramisu recipe

All the parts

I went with this one because it didn't use anything fancy or difficult to get hold of, the american ones all seemed to use things like pudding mix which to me seems to slightly defeat the point of making something from scratch. Also a lot of them used egg whites but this one used the yolks as well so that meant I didn't have to worry about storing them and figuring out what to use them for.

Yummy sponge fingers

It was fairly straight forward to make although a bit time consuming, beater washing and refrigerating between steps. There was a lot of whisking involved so certainly wouldn't recommend it unless you have an electric beater. It felt very satisfying assembling it, dipping the sponge fingers into the coffee mixture and arranging them in the dish, covering with a layer of the cream and then repeating. I did make one small change to the recipe, I added 1/3 cup of Kahlua to the coffee for soaking the sponge in as it was the general consensus that we would like it to be more boozy!

Finished Tiramisu

As an extra bonus there were some sponge fingers left over to dip in the coffee and then use to scrape the cream mix bowl clean :D

Something Different This Week

Sorry cake fans but I've not had any time to bake yet this week, two other things have been keeping me very busy. Firstly I've joined a gym, shock horror! I'm never going to be any good at dieting, I just enjoy cooking/baking and eating too much so I figured I should probably try and do more exercise instead. I know it's only been a week but I'm enjoying it so far, lets see how long I can stick with it! Gyms have some really crazy equipment these days, anyone had a go on a wave machine? It's like a stepper but instead of moving you're legs up and down you have to push them out side to side. Ugggh, it's horrible!

My second distraction has been Final Fantasy XIII. I guess it doesn't come across from this blog so much but I'm actually a massive geek :D Especially when it comes to Final Fantasy, I have been waiting for this game for what seems like forever and it finally arrived yesterday. It's actually had pretty mediocre reviews but personally I'm loving it so far. Sure it's a bit slow to get going and there are a ton of cut scenes but that's because it's all about the epic story and I like the cutscenes, they are absolutely gorgeous.

Never fear though, I haven't been totally uncreative and unproductive!

Tada! A vector art portrait I made of myself. Considering I haven't done much in the way of art for years I'm pretty pleased with this as a first attempt. I keep thinking maybe I should add more detail to it but then maybe that would ruin it?

Chocolate Heaven

Oh. My. Goodness. I was reading through my usual blogs last week and stumbled across these Marshmallow Crisp Brownie Bars. They looked incredible and after an entire day drooling over the pictures of them there was no way I was going to be able to go home and not make them. After a visit to the supermarket and purchasing a disgraceful amount of chocolate and other naughty ingredients the brownies were born!

I can confirm that they taste as good as they look, really not good as I actually want to lose weight, not put it on. The recipe makes a huge quantity so unless you are planning to share them (if you're anything like me you wont want to share, you'll want to hoard them all to yourself) you could probably half it. I split it between two tins anyway as I didn't have one big enough. Also I could have left them to cool a bit longer after adding the marshmallow layer, when I put the chocolate crispie layer on top it just sank into the liquid marshmallows.

On a side note my camera magically decided to come back to life! Yay, panic over. Also what do you think of the new layout? It's a bit of a work in progress, just adding/changing a little bit at a time.

It's Okay, I'm not Dead!

Yes that's right, long time no update but I'm still here. I'm gonna have trouble now thinking as far back as when I last updated though!

Well lets see, at least I have been keeping busy. I have been doing a lot of baking and cooking. At first I neglected to update this blog as I was really struggling to find the motivation to do anything for a week or so. I did manage to force myself to get up and do things but that took all my effort, then writing about what I'd been doing was just a bit too much. And since then I've just been super busy. It was my birthday and then my boyfriends and I have been being really sociable for a change! February was a really fun month but very tiring.

So, I've tried to keep track of some of the things I made in the hopes that I would get around to posting them eventually. Here's a couple of pictures to tide you over until I get round to posting about something properly.

This is the cake I made to take into work for my birthday. Yes it's a giant cupcake, that's a full size dinner plate it's sitting on. Awesome indeed and tasted great too, chocolate pound cake with butter cream icing. It's actually the second time I used this amazing cake tin that I got for Christmas, I'd had a practice run the week before as I wanted to make sure I got it right for my birthday :D

And this is the cake my wonderful boyfriend Chris got me for my actual birthday! It's Hello Kitty, enough said!
